Depl0y administration: access, audit, updates and backups

For the admin who runs the Depl0y panel itself: which actions need Admin, Operator or any role, TOTP and account hygiene, using the audit log to answer 'who did this', keeping the panel off the internet, what config.env holds and how logs from older versions can contain passwords, supported versions and safe upgrade paths, the state on disk, and why the Docker Compose path and old upgrade instructions don't apply.
